After spending decades helping to design, improve and manufacture food, I became increasingly interested in a much bigger question.
Not simply how we produce food, but why humans eat the way we do.
The deeper I looked into our history, biology and evolution, the clearer it became that food has shaped far more than our diet. It has shaped civilisation itself.
